If you want to combine cheese and curry then use panir. You can now get it in packs at most large supermarkets. It is most often used in restaurants as Sag Panir (or paneer) which is spinach and panir. Very nice too. Panir does not melt so stays as cubes. You use it it the same way as tofu i.e. fry it first to brown it a little. But cheddar? Cheddar would melt and produce a cheesy sauce. No! Please NO!
