regarding the dry roasted cumin seed used in the chicken do piaza. can you buy them dry roasted or do you have to roast them yourself. I've never seen them ready-roasted. But it is easy to do yourself. Just heat the seeds in a hot dry pan for a few minutes until the smell starts to change. You will know when this happens. Then let them cool and grind in a pestle and mortar or a clean coffee grinder. That's all there is to it!
