Chicken Tikka


Tikka means "pieces" and chicken tikka is small chunks of chicken, marinated in yoghurt and spices and cooked in a tandoor oven or over charcoal. In restaurants, chicken tikka usually has a bright red colour which is achieved by using artificial food colouring.

Chicken tikka holds a special place in British curry houses because it is the foundation of their most popular dish - chicken tikka masala. But don't overlook chicken tikka on its own. It makes a lovely summer meal accompanied by naan bread and a salad.
